Recipe Ingredients for Sloppy Portobellos

1 tbsp olive oil
1/2 c onion, minced
3 cloves garlic, minced
12 oz portobello mushrooms, finely chopped
4 oz green chiles, drained
1 tbsp soy sauce
2/3 c ketchup
2 tsp yellow mustard
1 tbsp chili powder
1/2 tsp Liquid Smoke
1/2 tsp salt
1/4 tsp black pepper

Recipe Directions for Sloppy Portobellos

  1. In a large saucepan, heat the oil over medium heat. Add the onion, cover, and cook until softened, about 4 minutes. Add the garlic and cook until fragrant, 30 seconds. Stir in the mushrooms, chiles, and soy sauce, and cook until lightly browned, 2 to 3 minutes.

  2. Stir in the ketchup, mustard, chili powder, Liquid Smoke, salt, and pepper. Mix well, adding a little water if the mixture is too dry.

  3. Simmer to blend the flavors, about 5 minutes. Spoon the mixture onto burger rolls and serve hot.
