Recipe Ingredients for Sloppy Joes

150 grams Lentils
3 c. water
1 tbsp. olive oil
1 medium yellow onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
3 tbsp. chili powder
2 tsp. oregano
1 tsp. salt
8 oz. tomato sauce
1/4 c. tomato paste
3 tbsp. maple syrup
1 tbsp. prepared yellow mustard
6 100% Whole Wheat Buns

Recipe Directions for Sloppy Joes

  1. Rinse lentils and remove any debris. Boil water over high heat. Add lentils and continue boiling for 2 ? 3 minutes. Lower heat and simmer for 20 ? 25 minutes until softened. Drain and set aside.

  2. Preheat a pot over medium-heat. Saute the onion and bell pepper in the olive oil for 7 minutes. Add garlic and saute 1 ? 2 more minutes. Add cooked lentils, chili powder, oregano, and salt and mix well. Add tomato sauce and tomato paste. Cook uncovered for about 10 minutes.

  3. Add maple syrup and mustard and heat through. Turn off the heat and let the mixture sit for about 10 minutes so the flavors can meld. Serve on buns.
