Recipe Ingredients for Sloppy Joes

1 T canola oil
1/2 cup red onion
1/2 cup celery
2 cloves garlic
20 oz ground turkey
1/2 cup sweet potato
1/2 cup red pepper
1/8 cup carrot
1/2 cup beef broth
1/4 cup tomato paste
1 T worcestershire sauce
1 t chili powder
1/2 t salt
1/8 t pepper

Recipe Directions for Sloppy Joes

  1. Puree sweet potato, then red pepper.

  2. Coat skillet with cooking spray.

  3. Heat over medium-high heat and when hot, add oil. Add onion, celery & garlic. Cook until onion is softened.

  4. Add meat, breaking up until no longer pink.

  5. Add vegetable purees, carrots, beef broth, tomato paste, worcestershire sauce, chili powder, salt & pepper.

  6. Reduce heat to low, cover and simmer until liquid is reduced by half, 15 - 20 minutes.

  7. Spoon over buns of your choice.
