Basically a sloppy joe based mix with a lot of veggies added for volume. Add curry or other spices for whatever flavor you aim for.

Recipe Ingredients for Sloppy Joe Casserole

400 g Eggplant
1 medium onion
1 red bell pepper
1 yellow pepper
125 g Fantastic Food Sloppy Joe mix
2 c water
1 c chopped tomatoes
1/2 c tomato sauce

Recipe Directions for Sloppy Joe Casserole

  1. Dice the vegetables.

  2. Zap the eggplant in microwaye until softened.

  3. Saute veggies in pan until slightly softened

  4. Stir veggies and 1 cup of the water together and simmer until thickened, about 15 minutes or so adding more water as needed.
