Recipe Ingredients for Slopppy Joes

1 tbls olive oil
1/2 cup chopped red onion
1/2 cup chopped celery
2 cloves garlic, minced
1 pound lean ground turkey
1/2 cup sweet potato, pureed
1/2 cup red bell pepper, pureed
1/2 cup low-sodium chicken broth
1/4 cup tomato paste
1 tbls Worcestershire sauce
1 tsp chili powder
1/2 tsp salt
1/8 tsp pepper
10 slices of bread

Recipe Directions for Slopppy Joes

  1. Coat a large nonstick skillet with cooking spray and set over meduim heat. Add onion, celery, and garlic. Cook 3-4 minutes

  2. Add the meat and cook for 4-5 minutes

  3. Add the pureed vegetables, broth, tomato paste, Worcestershire sauce, chili powder, salt, and pepper.

  4. Reduce heat to low, cover, and simmer until the liquid is reduced by about one-half, 15-20 minutes.
