A nice breakfast dish. Throw in whatever veggies are available as well. I put zucchini in mine a lot and my folks make it with mushrooms. Also works for a quick dinner.

Recipe Ingredients for Slop

1 bacon (4 strips of your favorite bacon, will alter calorie count slightly depending on the brand you use)
1 medium onion, diced
14 ounces tomatoes, diced (1 can petite diced)
14 ounces potatoes, diced (1 can diced)
1 clove garlic, minced
2 tablespoons red hot

Recipe Directions for Slop

Cut up the bacon into 1/2 inch pieces, sautee but not until crispy. Add the diced onion, cover and sautee until onions are starting to get soft (about 5 minutes). Add a can of diced potatoes and cook 3 or 4 minutes. Add a can of diced tomatoes, minced garlic, and Red Hot. Simmer until thick, stirring occasionally about 30 minutes.
