Recipe Ingredients for A Slimmed-Down Macaroni Salad

2/3 cup dry fusilli, whole wheat
2/3 cup dry fusilli, regular
1/4 cup reduced-fat mayonnaise
1/4 cup yogurt, nonfat plain Greek
2 tablespoons apple cider vinegar
1 1/2 teaspoons Dijon mustard
1 salt, to taste
2 medium carrots, grated
1/2 red or yellow bell pepper, finely chopped
3 scallions, thinly sliced
3 tablespoons chopped fresh parsley

Recipe Directions for A Slimmed-Down Macaroni Salad

  1. In a medium saucepan, bring 2 quarts of water to a boil. Cook fusilli for 10 minutes, or until al dente.

  2. Drain, run under cool water, and set aside. Meanwhile, whisk together mayonnaise, yogurt, vinegar, mustard, salt, and black pepper.

  3. Add pasta and toss to combine. Gently mix in carrots, bell pepper, and scallions. Refrigerate for at least one hour to allow flavors to blend. When ready to serve, top with parsley.
