A light but hearty soup. I made it not knowing what I was doing. I just used ingredients that I had on hand. The base of the soup is so yummy, and you could use whatever you have on hand. Please note 2 ingredients in the directions, as CC either didn't have it, or it wouldn't analyze it. Neither one adds calories, though, but they are very important spices.

Recipe Ingredients for Slim Picken's Group Veggie and Bean Soup

58 ounces Garden Vegetable Broth
29 ounces diced tomatoes
29 ounces Great Northern Beans
1 large onion, chopped
1 large red pepper, chopped
2 large zucchini, chopped
5 ounce bag baby spinach

Recipe Directions for Slim Picken's Group Veggie and Bean Soup

  1. In a large pot, add broth and diced tomatoes

  2. Rinse and drain the beans

  3. Here are the spices that are part of the recipe, and you add them at this time. They are 2 tablespoons Salt-Free Mrs. Dash Original blend.

  4. 2 large garlic cloves, grated

  5. add chopped onion and red pepper

  6. Bring this to a boil, and then turn heat down to simmer.

  7. After it simmers for a half hour, add zucchini, quarter it for times and then cut into bite size pieces.

  8. Continue to simmer for another hour.

  9. Add fresh spinach.

  10. When spinach is cooked, the soup is done.

  11. This is a spicy soup because of the Mrs. Dash, if you don't like spicy, substitute Italian Seasoning instead.

  12. ENJOY!
