Recipe Ingredients for Slightly Less Skinny Soup

6 cups beef broth
14 1/2 oz diced tomato (with juice)
8 oz chopped cabbage
5 oz chopped chuck roast
4 oz chopped onion
3 oz chopped celery
4 1/2 oz sliced carrots
14 1/2 oz green beans (with juice)
3 1/2 oz chopped zucchini
1 tsp basil
1 tsp oregano
1 tsp parsley
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
4.67 oz pearl barley
2 tbsp extra virgin olive oil

Recipe Directions for Slightly Less Skinny Soup

  1. Warm up olive oil in pot; saute onions, celery, cabbage, carrots and pre-cooked chuck roast, plus the seasonings/herbs for 5 minutes.

  2. Add the rest of the ingredients and simmer 1 hour.

  3. Cook barley as instructed on package and add to soup.

  4. Salt and Pepper to taste, and enjoy!
