Sliced thin and baked very good. may skip cheese.

Recipe Ingredients for sliced veggies

1 potato large (3" to 4-1/4" dia) Potatoes, Baked, Flesh And Skin
1 cup, sliced Squash, Summer, All Varieties
1 large raw Zucchini
3 Medium Tomatoes
1 tbsp chopped Onions
1/2 tsp Thyme, Fresh
1 dash Pepper, Black

Recipe Directions for sliced veggies

Slice everything thin and alternate into a baking dish. sprinkle with s&p and thyme. bake for 30 min then add cheese back for another 15 min
