All the ingredients of a California roll in a bowl.

Recipe Ingredients for slacker sushi

1 cup cooked brown rice
100 g surimi
1/2 avocado
1/3 cup carrots
1 tbsp white vinegar
1 tsp truvia
1/2 tsp salt
1 1/2 tsp toasted sesame seeds

Recipe Directions for slacker sushi

  1. Cook rice according to package directions. Let cool to room temperature.

  2. In a small bowl, combine the rice vinegar, sugar and salt. Microwave 30 seconds; stir until the sugar dissolves. Pour vinegar mixture on the rice and stir gently to combine. Mix in the carrots, cucumbers, and crab.

  3. Serve in bowls and top with avocado, seaweed, and sesame seeds. (If you?d like, add soy sauce or wasabi, to taste.) Serve immediately.
