I used homemade Chili with a mixture of beef and ground chicken and a seasoning packet sans beans. Also used fat free cottage cheese. Divided into 2 dishes and froze one.

Recipe Ingredients for SL Ultimate Chili Casserole

1 small onion
1 clove garlic
1 tbl canola oil
12 oz chili without beans
16 oz salsa
2 large eggs
24 oz fat free cottage cheese
6 oz shredded cheddar cheese
12 egg roll wrappers

Recipe Directions for SL Ultimate Chili Casserole

Saute onion and garlic in oil until tender. Stir in chili and salsa and cook 20 minutes till warm. Spoon half of mixture into bottom of casserole dishes. Preheat oven to 350. Stir eggs, cottage cheese and 1 cup cheddar. spoon 1/4 cup of this mixture on edge of egg roll wrapper and roll up. Place seam side down in casserole. spoon remaining mixture over rolls to cover. bake covered 45 minutes. remove cover and sprinkle with 1/2 cup remaining cheddar. bake 5 more minutes until melted. let stand 5 minutes.
