Recipe Ingredients for Skirt Steak and Horseradish Potato Salad

3 cloves garlic, large
3 tbsp horseradish, prepared
1 1/2 tbsp white wine vinegar
7 tbsp extra-virgin olive oil, divided
2 cups shallots, cut into thin rounds (about 4 large shallots)
1 1/2 lbs Yukon Gold potatoes, (about 4 medium potatoes), peeled, cut into 1/3" thick rounds
10 oz grape tomatoes
8 oz sugar snap peas, stringless
1 1/4 lbs skirt steak, cut into 4 pieces
8 oz watercress (2 bunches)

Recipe Directions for Skirt Steak and Horseradish Potato Salad

  1. Press garlic into small bowl.

  2. Whisk in prepared horseradish and white wine vinegar, then 6 Tbsps oil.

  3. Season dressing to taste with salt and pepper. Mix in sliced shallots.

  4. Steam potatoes until tender, about 12 minutes. Place potatoes in large bowl and let cool slightly.

  5. Add grape tomatoes and sugar snap peas to potatoes in bowl.

  6. Gently toss with enough dressing to coat and season to taste with salt and pepper.

  7. Heat 1 Tbsp. extra-virgin olive oil in heavy large nonstick skillet over high heat.

  8. Sprinkle skirt with salt and pepper.

  9. Sear skirt steak until crusty and medium-rare, 3-4 minutes per side.

  10. Transfer steak to cutting board and let rest 5 minutes.

  11. Thinly slice steak on slight diagonal across grain.

  12. Divide watercress among 4 plates; drizzle with more dressing.

  13. Top with horseradish potato salad, then steak slices.

  14. Serve with remaining dressing alongside.
