Recipe Ingredients for Skirlie Stuffed Chicken

2 1/2 lb chicken
2 oz oatmeal
1 small onion, chopped
1 oz shredded suet
1 salt and pepper
1 mixed herbs

Recipe Directions for Skirlie Stuffed Chicken

Set oven to 350F or Mark 4. Remove the giblets for gravy. Rinse and wipe the chicken well. Put the oatmeal, onion and the suet in a bowl. Add salt and pepper and herbs to taste. Mix well with a fork. Stuff the chicken. Take care not to overfill the cavity as the oatmeal swells when cooked. Place the chicken in a roasting tin and roast for 20 mins to the pound and 20 mins over. Serve with roast potatoes and fresh vegetables.
