Recipe Ingredients for Skinnytaste Stuffed Pepper Stoup

1 lbs. Organic Grass-Fed Lean Ground Beef
1/2 teaspoon allspice
4 cloves garlic
28 ounces organic petite diced tomatoes
14 1/2 ounce can tomato sauce
1/2 large yellow onion
1 red bell pepper
1 green bell pepper
1 tsp,+crumbled bay leaf
2 cups organic vegetable broth
1 dash salt and pepper
3 cups Rice, Brown, Medium-grain, Cooked

Recipe Directions for Skinnytaste Stuffed Pepper Stoup

  1. Heat olive oil in a large sauce pan.

  2. Brown ground beef in the oil over medium heat.

  3. Add minced garlic, chopped bell peppers, and diced onion. Saute until vegetables become tender.

  4. Stir in crushed tomato until all ingredients are combined.

  5. Add chicken stock. Heat to boil.

  6. Add allspice, salt, pepper, and bay leaf. Stir ingredients and let simmer for approximately 10 minutes. Usually, the longer you let soups simmer, the better they taste; it won't hurt to cook this as long as you see fit.

  7. Add orzo pasta and cook for 7-8 minutes (or for duration listed on the bag of pasta).

  8. Top with basil. Fold into soup.

  9. Serve hot. Soup is delicious topped with grated parmesan.
