I got the cutest Petite Loaf Pan for Christmas and thought individual mini meatloaves would be a perfect recipe to break it in. These low fat meatloaves are kid friendly and they cook quicker than making one big loaf. I actually prefer turkey meatloaf to beef, it's always moist and has great flavor. I replaced breadcrumbs with cholesterol lowering oatmeal for added nutrition. Serve this with Skinny Garlic Mashed Potatoes and a fresh veggie for a complete dinner. http://www.skinnytaste.com/2009/03/petite-turkey-meatloaves-45-pts.html

Recipe Ingredients for Skinny Turkey Meatloaves

1/2 small Onions
1 tsp Extra Virgin Olive Oil
16 oz Extra Lean 99% Fat Free Fresh Tray Ground Breast
1/2 cup dry Old Fashioned Quaker Oats
1/2 cup Tomato Ketchup
2 teaspoon Worcestershire Sauce
1 large Egg, Whole
1 tsp Marjoram, Dried
1 dash Salt, Table

Recipe Directions for Skinny Turkey Meatloaves

  1. Preheat the oven to 350. Saute olive oil and onion on low until translucent.

  2. In a medium bowl mix turkey, onion, oatmeal, egg, ketchup, salt and marjoram. Divide into four equal loafs and place each loaf into a non stick mini loaf pan or shape into small loafs on an un-greased nonstick baking pan.

  3. In a small cup mix remaining 2 tbsp ketchup with worcesterchire sauce and brush onto each loaf to give it a nice glaze.

  4. Bake uncovered for about 40 minutes at 350. After baking let it sit for 5 minutes serving.
