A thin omelet folded with cheesy pesto and spinach

Recipe Ingredients for Skinny triangle omelet

2 large eggs, organic
1/8 tsp sea salt
1 tbsp fresh chives, chopped
1 tbsp pesto, kirkland signature
3/4 cup spinach, fresh
2 tsp olive oil

Recipe Directions for Skinny triangle omelet

  1. Beat the eggs with a little water in a bowl

  2. Pour eggs into heated, greased frying pan and swirl around until it fills the whole pan and is thin (like a thick crepe)

  3. Sprinkle or grind some sea salt onto the eggs then sprinkle on the chives (do it before the eggs set)

  4. When the top is nearly set, take it out of the pan and put it onto a cutting board

  5. Spread pesto across the top of the omelet

  6. Put the spinach on top of the omelet

  7. Fold the omelet into four
