Recipe Ingredients for Skinny Southwestern Bean Salad

15 1/2 oz Black Beans Drained and Rinsed
1 can (12 oz) yields Corn, Sweet, Yellow
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 fruit without skin and seeds Avocados
1/4 cup chopped Red Onion
1 large Onions, Spring Or Scallions
1 lime+yields lime yields Lime Juice
3 serving Extra Virgin Olive Oil
3 tsp Cilantro
1 dash Salt

Recipe Directions for Skinny Southwestern Bean Salad

Combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper. Mix with lime juice and olive oil. Marinate in the refrigerator 30 minutes. Add avocado before serving.
