Joy Bauer's skinny soup modified (no cabbage, more tomatoes, less broth)

Recipe Ingredients for skinny soup

4 cloves garlic
1 onion
1 1/2 cups chopped celery
8 oz. sliced mushrooms
1 cup chopped carrots
2 cups chopped cauliflower
2 cups chopped zucchini
28 oz can diced tomatoes
6 cups low sodium chicken stock
2 T red wine vinegar
1 T Italian seasoning

Recipe Directions for skinny soup

  1. In large nonstick pot coated with cooking spray, saute the garlic, onion, celery and mushrooms over medium heat until tender. Add stock, carrots, zucchini, grean beans, cauliflower, canned tomatoes, bay leaves and Italian seasoning. Bring it to a boil, cover and simmer over low heat for 20 minutes.

  2. Add the vinegar and cook for an additional 2 minutes. Remove the bay leaves, let cool and I like to puree with immersion hand blender.
