Recipe Ingredients for Skinny Sheet Cake

2 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 tsp Baking Soda
0.25 tsp Salt, Table
0.75 cup (8 fl oz) Water
4 tbsp Egg Whites
4 fl oz Original Almond Breeze Unsweetened
6 oz FAGE Total 2%
2 tbsp Omega Plus Buttery Spread
1 cup Sugars, Granulated
3 oz Truvia
1 tsp Vanilla Extract
1 container Total 2% Greek Yogurt with Honey
3 fl oz Original Almond Breeze Unsweetened

Recipe Directions for Skinny Sheet Cake

  1. CAKE:

  2. Cooking spray

  3. 2 cups all-purpose flour

  4. 1 cups granulated sugar

  5. + 3oz Truvia or no-cal sweetener

  6. 1 teaspoon baking soda

  7. 1/4 teaspoon salt

  8. 3/4 cup water

  9. 6 oz 0% Fage Greek Yogurt

  10. 1/2 Cup Almond Milk

  11. 1 teaspoon vanilla extract

  12. 3 TBSP Egg Whites

  13. ICING:

  14. 1 Fage Greek HONEY Yogurt

  15. 1/3 cup Almond Milk

  16. 1 cups powdered sugar

  17. 2 scoops low carb Whey Vanilla Protein Powder

  18. 2 teaspoons vanilla extract

  19. Preheat oven to 375 F.

  20. To prepare the cake, coat a 15 x 10 jelly-roll pan with cooking spray, and dust with 2 teaspoons flour. Set prepared pan aside.

  21. Lightly spoon flour into dry measuring cups; level with a knife. Combine 2 cups flour and next 3 ingredients in a large bowl; stir well with a whisk. Combine water, greek yogurt, and splash of milk in saucepan; bring to a boil, stirring frequently. Remove from heat; pour into flour mixture. Beat at medium speed of a mixer until well-blended. Add milk , 1 teaspoon vanilla, and egg whites; beat well. Pour batter into prepared pan; bake at 375 F for 17 minutes or until a wooden pick inserted in center comes out clean. Place on wire rack.

  22. To prepare the icing, combine honey greek yogurt, milk and sweetener in saucepan; bring to a boil, stirring constantly. Remove from heat, and gradually stir in powdered sugar, pecans (ooptional I did not use), and 2 teaspoons vanilla. Spread over hot cake. Cool completely on wire rack.

  23. Note: You can also make this recipe in a 13 x 9 inch baking pan. Bake at 375 F for 22 minutes.
