Delicious mini cheese cakes - that are made light but taste rich.

Recipe Ingredients for Skinny Mini Cherry Topped Cheesecakes

47 g Vanilla Wafers, Reduced Fat
12 ounces creamy cheese, fat free
1/3 cup sugar
2 tbl Yogurt, Fat Free Vanilla
1 1/2 tsp vanilla extract
1 tsp all-purpose flour
3 egg whites
1 cup Pie Filling Cherry

Recipe Directions for Skinny Mini Cherry Topped Cheesecakes

  1. Use 12 cup muffin tin w/ liners. Mist them lightly with butter flavored spray. Place one Vanilla wafer in the bottom of each one.

  2. With electric mixer beat the cream cheese and sugar until well combined. Add the yogurt, vanilla, and flour, mix on low until just combined.

  3. Switch to a whisk on your mixer and beat the egg whites in a small bowl until soft peaks form. Gently fold into cheese mixture.

  4. Divide the mixture among the muffin cups. Bake for 18 - 20 minutes or until set. They will puff up and the tops will crack, but that's normal and won't show when topped with 1 Tbl of cherry pie filling.

  5. Transfer pan to cooling rack and cool to room temperature, then refrigerate for at least 5 hours or overnight.

  6. Top each one with 1 Tbl of cherry pie filing.
