Minestrone soup with whole wheat pasta

Recipe Ingredients for Skinny Minestrone

2 tsp olive oil
3/4 cups spanish onions
1/2 cup celery
2 cloves garlic
28 oz diced tomatoes
3 cups low-sodium chicken broth
224 g V8 100% Vegetable Juice
1 cup chopped carrots
1 cup chopped zucchini
1 cup green cabbage
1 cup canned chickpeas
2 oz whole wheat pasta
3 tbsp fresh parsley
1/2 tsp bay leaf
2 tsp dried oregano
1/2 tsp thyme
1/2 tsp black pepper

Recipe Directions for Skinny Minestrone

  1. Heat olive oil in a large soup pot over medium heat. Add onions, celery, and garlic. Cook and stir for 3 minutes, until vegetables begin to soften.

  2. Add all remaining ingredients. Bring to a boil. Reduce heat to medium-low. Simmer, partially covered, for 30 minutes.
