Non-Butter, Non-Milk Mashed Potatoes. Almost as good as the real thing.

Recipe Ingredients for Skinny Mashed Potatoes

1 large potato
1/2 c chicken broth
1/4 tsp salt

Recipe Directions for Skinny Mashed Potatoes

  1. Peel and cut up potato

  2. Starting in a large saucepan of cold water, bring potato and water to a boil.

  3. Boil until potato is fork tender

  4. Drain Potato

  5. Place in stand mixer and beat on low speed for 30 seconds.

  6. Gradually add hot broth and salt until potatoes are creamy and fluffy.
