These are good for an appetizer with some fat free marinara sauce for dipping.

Recipe Ingredients for Skinny Italian Spinach Meatballs

16 oz Laura's 96% Lean Ground Round
0.53 oz Extra Virgin Olive Oil
10 oz Spinach
2 serving 100% Whole Wheat Sliced Bread
1 large Egg, Whole
2 clove Garlic
1 oz Parsley
1/2 cup Parmesan, Grated Cheese

Recipe Directions for Skinny Italian Spinach Meatballs

  1. Thaw and drain the frozen chopped spinach.

  2. Mince the garlic cloves.

  3. Wet the bread slices and squeeze out all of the water.

  4. In a large bowl combine all of the ingredients except for the olive oil. Mix together well.

  5. Put the olive oil in a large skillet.

  6. Fill a 1/4 cup measuring cup with some of the mixture then divide this in half. So this would give you 1/8 cup.

  7. Shape the 1/8 cup mixture into a small meatball in place in skillet.

  8. You should get 25 to 30 meatballs and a serving size is about 5 meatballs
