For Sofrito: 6 scallions, chopped 4 cloves garlic, chopped fine 2 tomatoes, diced 1/4 red pepper, diced 1 tsp ground cumin 2 tsp salt 1 packet sazón (optional) For Stew: 3 tsp olive oil 8 pieces chicken legs and thighs, skin removed 1/2 (6 oz) light beer 1-1/2 cup water salt garlic powder 1 cup cilantro, chopped

Recipe Ingredients for Skinny Gina - Sofrito Chicken Stew

40 g scallions, 6 chopped
15 g garlic cloves, 4 chopped fine
822 g , 2 cans or 2 tomatoes, diced
95 g red pepper, 1/4 diced
1 tsp ground cumin
2 tsp salt
5 g , 1 packet sazon
1 tbsp , extra virgin olive oil
993 g , used chicken breast, 8 pieces chicken legs and thighs, skin removed
6 oz , lite beer (used Miller Lite)
1 1/2 cups water
1 tsp salt
1 tsp garlic powder
45 g cilantro, 1 cup chopped

Recipe Directions for Skinny Gina - Sofrito Chicken Stew

  1. Heat oil in a deep saute pan.

  2. Add scallions and garlic.

  3. Sauté 2 minutes, add tomatoes and pepper.

  4. Season with salt, cumin, and sazón.

  5. Season chicken with salt and garlic powder.

  6. Add to center of the pan allowing chicken to brown slightly on both sides.

  7. Add beer, water and cilantro.

  8. Adjust salt if needed.

  9. Cover pan and simmer on low until chicken is cooked through, about 20 minutes.

  10. Serve over rice.
