Eggplant parm minus the coating and baked instead of fried.

Recipe Ingredients for Skinny Eggplant Parm

2 lbs eggplant
1 cup tomato sauce
5 tbsp bread crumb
1 tsp garlic powder
4 tbsp parmesan cheese
2 tbsp olive oil
5 tbsp flax seed

Recipe Directions for Skinny Eggplant Parm

spray baking sheet with PAM. Peel and slice eggplant into 1/4 inch slices. Lay on cookie sheet and brush tops with olive oil. Bake until just tender at 350 degrees. Remove from oven. In baking dish, coat bottom with tomato sauce. Lay in one layer of eggplant. drizlle with tomato sauce, sprinkle with garlic powder, cheese breadcrumb and flax seed. Lay another layer of eggplant and repeat. Bake at 350 until bubbly.
