Turkey bacon gives this creamy corn chowder a fabulous flavor without adding a lot of saturated fat. The soup has less than 190 calories per serving so its an excellent choice if you are watching your weight. From first chop to serve = 1 1/4 hours

Recipe Ingredients for Skinny Corn Chowder

1 cup Corn, Sweet, Yellow

Recipe Directions for Skinny Corn Chowder

  1. Heat oil in a large saucepan over medium heat. Add bacon, onion, bell peper and celery. Cook, stirring frequently, until veggies are softened and beginning to brown, 7 to 8 minutes. Sprinkle flour over the veggies and cook for 1 minute more.

  2. Add broth and bring to a boil, whisking constantly. Reduce heat to low and simmer, uncovered, stirring occasionally, until slightly thickened, about 15 mins.

  3. Add corn, potatoes, milk and salt and pepper to the pan. Return to a simmer and cook, uncovered, until the vegetables are tender, 20 to 30 minutes. Garnish with 2 TBSP fresh chopped parsley if desired. Enjoy!
