Recipe Ingredients for Skinny Chicken Stroganoff

4 slices turkey bacon, cooked & broken
6 oz. whole wheat pasta
3/4 cup sour cream
1/4 cup all-purpose flour
14 1/2 oz. chicken broth
1/8 tsp. black pepper
1 lb. boneless chicken breasts, cut into 1/4" strips
8 oz. sliced fresh mushrooms
1 cup chopped onion
1 clove garlic
2 tbsp. snipped fresh parsley

Recipe Directions for Skinny Chicken Stroganoff

  1. Cook bacon until crisp. Remove from pan, break and set aside.

  2. Cook noodles according to package instructions. Drain and keep warm.

  3. Meanwhile, in a good-sized bowl, whisk together sour cream and flour until smooth.

  4. Gradually whisk in chicken broth until smooth. Stir in pepper. Set aside.

  5. Heak skillet that you used for bacon over high heat until hot. Add chicken. Cook, stirring continually for 3 minutes, or until meat is no longer pink. Remove from pan and set aside. Keep warm.

  6. Reduce heat to medium. Add mushrooms, onion and garlic. Cook and stir 3 minutes.

  7. Stir in chicken and bacon.

  8. Stir in sourcream mexture. Bring to a boil.

  9. Reduce heat. Simmer 2 minutes, stirring constantly.

  10. Remove from heat. Stir in parsley.

  11. Serve over prepared noodles.
