Use 1 baked chicken thigh, 1/2 breast or 2 thighs

Recipe Ingredients for Skinny Chicken Pot Pie

1 c. chopped chicken
2 small carrots
1 medium potato
1/3 c. onion
1/2 c. celery
2 tblsp frozen corn
2 tblsp frozen peas
1/2 c. cream
6 ounces chicken broth
1/2 can cream of chicken soup
1 Pillsbury pie crust

Recipe Directions for Skinny Chicken Pot Pie

  1. Chop all.

  2. Cook on stovetop with 1/2 broth until tender, add garlic, pepper, thyme, tarragon and basil to taste.

  3. Mix cream of chicken soup and rest of broth, add.

  4. Simmer about 10 minutes.

  5. Lay 1/2 of crust on bottom of small casserole.

  6. Add veggies and chicken to casserole.

  7. Lay rest of crust on top.

  8. Bake 350 until crust is golden.
