leave the skin on the potatoes--seasoning quantities are approximate. optional: replace half of sour cream with parmesan or other cheese, or add rosemary or chile. Or, use fresh, crushed garlic to taste.

3 lbs red potatoes
1 tsp Garlic powder
1 tsp black pepper
1 Salt
1 cup Skim milk
3/4 stick Butter
3/4 cup sour cream

Recipe Directions for Skin-on Sour Cream Mashed Red Potatoes

  1. Wash potatoes, cut into approx even sized chunks, simmer in water until soft when poked with a fork.

  2. Meanwhile, warm milk and butter until butter is melted (microwave or stovetop), stir in sour cream and seasonings.

  3. Drain water from potatoes and mash with dairy/seasoning mixture.
