Zucchini, squash, artichoke hearts and pineapple are quickly cooked with crumbled bacon

Recipe Ingredients for Skillet Zucchini & Squash

2 slice turkey bacon, crumbled
3 oz zucchini, cut into 1/4-inch slices
3 oz squash, cut into 1/4-inch slices
2 artichoke hearts, drained and chopped
4 ounce pineapple chunks - drained with 1 tbsp juice reserved
1/2 tablespoon low sodium soy sauce
1 salt and pepper to taste
1/2 teaspoon dried basil
1/8 teaspoon garlic powder
1/4 teaspoon Italian seasoning
1 tbsp Parmesan cheese (optional)

Recipe Directions for Skillet Zucchini & Squash

  1. Cook and crumble bacon and set aside.

  2. In skillet, cook zucchini and squash for 2 minutes. Stir in the artichoke hearts, pineapple and crumbled bacon.

  3. Pour in the reserved pineapple juice and the soy sauce. Season with the salt and pepper, basil, garlic power and Italian seasoning. Cover and simmer over low heat for 5 minutes stirring occasionally. Do not over cook.

  4. Topped with Parmesan cheese, if desired.
