Recipe Ingredients for Skillet Slaw with Tofu

7 oz TOFU
1 T peanut butter
1 T ketchup
3 T sesame oil
3 T low sodium soy sauce
1 t dry mustard
1 clove garlic minced
1 c chopped onion
1 carrot, shredded
3 cups shredded cabbage
1 clove garlic, minced
1 T oil
2 T low sodium soy sauce

Recipe Directions for Skillet Slaw with Tofu

  1. Mix marinade of ingredients peanut butter to garlic, marinate tofu slices for an hour

  2. Heat oil, add onion and carrot. Stir fry for 3 minutes, add garlic, stir for another minute. Move to side of pan, drain tofu, reserving marinade. Saute tofu, adding more oil if needed. Cook, turning for about 3 minutes. Add cabbage, mix all together, add rest of marinade and cook two minutes.

  3. Optional additions: Serve over rice; add Omelet made of 1/4 c egg beater, cut in strips added to top of stir fry; chopped peanuts
