1 tbsp Oil Olive Extra Virgin
1 fruit (2-1/8" dia) Lemons
4 cloves, raw Garlic
0.25 tsp Lemon Peel
0.5 tsp Salt, Table
0.25 tsp Pepper, Black
28 oz raw Boneless Skinless Chicken Thighs
16 oz Ruby Fingerling Red Potatoes
1.5 cup Organic Cherry Tomatoes
0.125 tablespoon Rosemary

Recipe Directions for Skillet Roasted Lemon Chicken w/Potatoes

  1. Grease cast iron skillet with olive oil and arrange lemon slices in a single layer

  2. combine 1 tsp oil, 2 cloves, lemon peel salt and pepper and rub chicken, place over lemon slices

  3. In a large bowl, combine rosemary, garlic, remaining oil salt and pepper. Add potatoes and toss to coat. Arrange over chicken

  4. Bake uncovered at 450 degrees for 25-30 minutes
