From America's Test Kitchen Healthy Family Cookbook. "Parsnips wider than 1 inch may have tough, fibrous cores that are best trimmed and discarded. Any weight combination of carrots and parsnips with a combined weight of 1 1/2 lbs can be used in this recipe. You will need a 12-inch non-stick skillet with a tight fitting lid for this recipe."

Recipe Ingredients for Skillet-Roasted Carrots and Parsnips

3/4 cup warm water
3/4 tsp brown sugar
1 salt and pepper
1 tbsp vegetable or canola oil
12 oz carrots (about 4 carrots), peeled and sliced 1/2 thick on the bias
9 oz parsnips (about 3 parsnips), peeled and sliced 1/2 thick on the bias
1 tbsp minced fresh parsley

Garlic and Thyme variation:
1 tsp vegetable or canola oil
2 cloves of garlic, minced
1 tsp fresh thyme, minced

Recipe Directions for Skillet-Roasted Carrots and Parsnips

  1. Whisk water, sugar and 1/2 tsp salt in a bowl until dissolved. Heat the oil in a 12 inch nonstick skillet over medium heat until shimmering. Add the carrots and water mixture, cover, and cook, stirring occasionally until the carrots begin to soften but a substantial amount of water remains in the skillet, 7-9 minutes.

  2. Uncover, increase the heat to high, and add the parsnips. Continue to cook, stirring occasionally, until the water has completely evaporated and the vegetables are well browned, 13-18 minutes. Off the heat, stir in the parsley, season with salt and pepper to taste, and serve.

  3. For Garlic & Thyme variation: After the vegetables are well browned in step 2, clear the center of the skillet, add the oil, garlic, and thyme. Cook, mashing the mixture into the pan, until fragrant, about 30 seconds,. Continue to stir in parsley, as directed.
