Awesome potato side for breakfast

Recipe Ingredients for Skillet Potatoes

1 cup cooked potatoes
1/4 cup onion
1/4 cup cheese
1 tablespoon olive oil
1 salt
1 pepper

Recipe Directions for Skillet Potatoes

Cut potato into large cubes and boil until slightly tender. Drain and set aside. Put oil into hot skillet and add chopped onions and pepper. Cook on low until tender. Add potatoes and brown for 2 minutes. Remove from heat and top with cheese. Cover and let set for 5 minutes to allow cheese to melt.
