I go this from Cook's Country Magazine, so easy to make and we do so often. Makes 2, 9" personal, thin crust pizza's. This recipe does not include the amount of oil the pizza's are cooked in (which would be up to 3 tbsp per pizza and is variable. Recipe Ingredients for Skillet Margharita Pizza

1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon sugar
1/2 teaspoon salt
1/3 cup beer (see Step by Step)
1 tablespoons olive oil
2 tablespoon basil
6 ounce fresh mozzarella
2 tablespoon sun dried tomato

Recipe Directions for Skillet Margharita Pizza

  1. Use your favorite dark beer - we love ales. You are using the beer in place of yeast and the waiting time involved with regular pizza dough.

  2. In food processor combine: flour, baking powder, sugar, salt. While pulsing add beer and 1 tbsp olive oil. Once dough combines, remove from food processor and form to a ball. Cover in plastic wrap and allow to rest while preparing toppings.

  3. We love shredded or sliced mozzarella, fresh basil and either sun dried tomatoes, or thinly sliced Roma tomatoes that have been left on a paper towel to drain off the excess liquid.

  4. To cook the pizza dough:

  5. First divide dough in half and roll each piece into 9" rounds (this will be a very thin crust pizza).

  6. Place about 1 1/2 tbsp olive oil in med heat skillet and wait until it shimmers. Add one of your rounds and let the first side lightly brown. Poke down any bubbles with a fork. You can lightly coat the top side of the dough with oil at this point. Flip when first side is browned.

  7. While second side is cooking, add your toppings and cover pan. As you are not using any raw ingredients, you only need to let it cook long enough to have your cheese melt, or the bottom of the crust browned to your taste.
