Green Chile and Chicken Enchildas

Recipe Ingredients for Skillet Green Chile & Chicken Enchildas

1 can (10 3/4 oz) cream of chicken, 98% fat free
1 cup jalapenos, cooked, diced
12 corn tortillas
1 cup cheddar cheese, reduced fat
3 cups chicken, cooked and shredded

Recipe Directions for Skillet Green Chile & Chicken Enchildas

  1. Spray large skillet with cooking spray.

  2. Heat tortillas and chicken over medium-high heat 7 minutes, or until tortillas are softened and browned, stirring frequently.

  3. Mix cream of chicken soup and jalapenos together and pour sauce over tortilla-chicken mixture, stir to blend. Sprinkle with cheese. Cover, heat until sauce is hot and cheese is melted.
