In this one-skillet supper,dark leafy greens and gnocchi are tossed with diced tomatoes and white beans. It is all topped off with gooey mozzarella. Serve it with a mixed green salad with a vinaigrette.

Recipe Directions for Skillet Gnocchi with Spinach and White Beans

  1. Heat 1TBSP olive oil in a large nonstick skillet or ver medium heat. Add gnocchi and cook, Stirring often, until plumped and starting to brown (5-7 mins). Transfer to a bowl.

  2. Add 1 tsp. oil and onion to the pan and cook, stirring, over medium heat for 2 mins. Add spinach and cook, stirring, untill starting to wild, 1-2 mins.Stir in tomatoes, beans and 1/4 tsp pepper and bring to a simmer. Stir in the gnocchi and sprinkle with mozzarella and parmesan cheese. Cover and cook until the cheese is melted and the sauce is bubbling, about 3 mins.
