corn tortillas with ground beef cooked in a skillet, very easy

Recipe Ingredients for skillet enchiladas

1 lb ground beef
1 onion chopped
10 3/4 oz 98% Fat Free Cream of Mushroom Condensed Soup
10 oz Old El Paso Sauce Enchilada Mild
2 tbs chopped green chilies
8 corn tortillas
10 oz Reduced Fat Mild Cheddar Shredded Cheese
1/2 c ripe olives
1/3 c fat free milk

Recipe Directions for skillet enchiladas

cook beef and onion until the meat is no longer pink; drain. stir in the soup, enchilada sauce, milk and chilies. bring to a boil. reduce heat, cover and simmer for 20 minutes stirring occasionally. Meanwhile, heat 1/4 in oil, dip each tortilla in hot oil for 3 seconds on each side or just till limp, drain on paper towels. top each tortilla with 1/4 cup cheese and 1 tbs olives, roll up and place in pan over beef mixture, spooning some of mixture over the enchiladas, cover and cook about 5 minutes, sprinkle with remaining cheese, cover and cook untl cheese is melted. 8 servings
