Recipe Ingredients for Skillet eggplant linguine

2 eggplants, cubed
4 large tomatoes, diced
8 cloves garlic, minced
8 tbsp olive oil
14 oz black olives
1 can anchovies, olive oil packed
13 1/4 oz linguine, dry whole wheat
1 tsp sea salt
1/2 tsp ground black peppers
1 tbsp grated parmesan cheese
6 leaves fresh basil

Recipe Directions for Skillet eggplant linguine

  1. Heat water for boiling pasta

  2. Heat oil over medium-high in a large, non-stick skillet.

  3. Add diced eggplant, stirring quickly to coat in oil, and cook until mostly tender, stirring frequently

  4. Add linguine to boiling water. Cook according to package directions.

  5. Stir diced tomato and garlic in with the eggplant. Cook about 5 minutes longer, stirring frequently.

  6. Add all remaining ingredient, other than the parmesan cheese, and continue cooking until heated through and eggplant is tender.

  7. Serve sprinkled with parmesan cheese and fresh basil, if desired.
