Skillet Egg Casserole Recipe

Delicious casserole that doesn't have to be made 12 hours beforehand.

Recipe Ingredients for Skillet Egg Casserole

5 large eggs (Eggland's Best)
1/4 cup 1% milk
1/2 cup shredded cheddar cheese
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1 cup chopped broccoli
1/4 oz. Canola Oil (spray)

Recipe Directions for Skillet Egg Casserole

  1. Mix together in a bowl the eggs and milk until thick and smooth.

  2. Spray large skillet with canola oil and place over medium high. Evenly distribute the vegetable on the bottom of the pan. Put the heat on Medium and place lid on skillet.

  3. After one minute remove lid and mix up the vegetable. Replace lid for one more minute. Remove lid and mix up vegetables. If there is a lot of moisture keep lid off and keep stirring vegetable until most of the moisture has dried off. Now smooth out layer of vegetable across the pan.

  4. Pour the egg/milk mixture over the vegetables. Put on lid. Time for 90 seconds. Remove lid and sprinkle on the cheese. Turn off heat. Put on lid and leave for 2 - 3 minutes. (I'm using Miele electric range)

  5. Remove lid. Casserole should look fluffy. Cut into sections and serve.
