Recipe Ingredients for Skillet Cornbread

2 tsps oil, canola
2 cups buttermilk, low fat
1 egg
1 3/4 cup cornmeal
1 tsp baking powder
1 tsp baking soda
1 tsp salt

Recipe Directions for Skillet Cornbread

Coat bottom and sides of 1 10-inch cast iron skillet with canola oil; heat in a 450 degree oven. Whisk together buttermilk and egg. Add cornmeal, stirring well. Whisk in baking powder and baking soda, and the salt. Pour batter into the hot skillet. Bake for 15 minutes.
