You can cook & drain the barley a day ahead. Keep the barley & the barley water separate in the refrigerator.

Recipe Ingredients for Skillet Collards & Winter Squash with Barley

1 cup Barley
4 cup Vegetable Broth
0.5 tsp Salt, Table
2 tbsp Olive Oil
32 oz Squash, Winter, Butternut
16 oz Collard Greens
2 clove Garlic
1/4 tsp Ground Black Pepper
15 grams Sage
1 lemon yields Lemon Juice

Recipe Directions for Skillet Collards & Winter Squash with Barley

  1. Combine the barley and the veg broth in a medium saucepan, add salt to taste & bring to a boil.

  2. Reduce thew heat & simmer 50 minutes to an hr.(longer for purple barley), until the barley is tender. There should still be plenty of water in the pot. Place a strainer over a bowl drain the barley. Measure out 1 cup of the broth. Transfer the barley to a serving bowl & keep warm.

  3. Heat 1 tablespoon of the oil over med-high heat & sear the squash for 5-10 mins, until it is lightly colored. Add the greens & cook, stiring, until they are wilted, about 5 mins. Add the garlic, salt, pepper & sage & cook, stirring, for a couple of minutes, until the mixture is fragrant, then add the stock or barley water & bring to a simmer. Reduce the heat to low, covver simmer 10 minutes, until the squash & greens are tender. Add lemon juice to taste, drizzle on the remaining olive oil, adjust seasoning & serve with the barley.
