Recipe Ingredients for Skillet Chicken Parmesan

2 slices white bread
1 cup parmesan
1/4 cup fresh basil
6 cloves garlic
14 1/2 ounces crushed tomatoes
1/4 cup all-purpose flour
1 lb boneless skinless chicken breast
1 tbs olive oil
1/2 cup mozzarella
1/2 cup provolone

Recipe Directions for Skillet Chicken Parmesan

  1. Grind bread in food processor. Toss in large skillet over med-high heat until browned, about 5 minutes. Transfer to bowl with 1/4 cup Parmesan, 2 cloves minced garlic, and half of basil. In another bowl, combine 1/4 cup parmesan, remaining basil, 4 cloves garlic, tomatoes and pepper to taste.

  2. Halve chicken breasts horizontally.

  3. In dish, coat chicken with flour. Heat 1/2 tbs olive oil in now-empty skillet over med-high heat until shimmering. Add half of the cutlets and cook until golden brown, about 5 minutes. Transfer to paper towel- covered plate and repeat with remaining cutlets and oil.

  4. Reduce heat to med-low and add tomato mixture to empty skillet. Heat for a couple of minutes. Return chicken in even layer. Sprinkle remaining cheese over chicken. Cover with lid and cook about 5 minutes, until cheese is melted. Sprinkle with bread crumb mixture, and serve.
