Recipe Ingredients for Skillet Chicken "Parm"

1/4 cup White Whole Wheat Flour
2 1/2 teaspoons Italian Seasoning
1 pound boneless skinless chicken breast
2 tablespoons extra-virgin olive oil
10 ounces grape tomatoes
2 cloves garlic
3 ounces mozzarella

Recipe Directions for Skillet Chicken "Parm"

  1. Whisk together flour, 2 tsp of seasoning, and 1/4 tsp of black pepper. Dredge chicken in flour mixture to coat.

  2. Heat oil in large broiler-safe nonstick skillet over medium-high heat. Add chicken and brown, turning, until golden and cooked through, 4-6 minutes. Transfer to plate.

  3. Heat broiler

  4. Add otmatoes and remaining 1/2 tsp seasoning to skillet. Cook, stirring, unti ltomatoes are broken down and becoming saucy, about 6 minutes. Add garlic and cook 1 minute longer. Remove pan from heat, nestle chicken into sauce, and top with cheese.

  5. Broil chicken 6" from heat until cheese is golden, about 2 minutes.
