Recipe Ingredients for Skillet Chicken with Mushrooms & Sun Dried Tomatoes

1 tbsp olive oil
12 oz boneless, skinless chicken breast halves
1 onion, finely chopped
4 garlic cloves, minced
5 1/2 tsp. dried basil
5 1/2 lbs. mushrooms, sliced
1 cup chicken broth
1/4 cup tomato paste
1/2 cup parsley, minced
1 tbsp. unsalted butter, softened
1 tbsp. flour

Recipe Directions for Skillet Chicken with Mushrooms & Sun Dried Tomatoes

  1. In large skillet, heat reserved oil from sun dried tomatoes over medium-high heat. Brown chicken breasts seasoned with salt and pepper. Transfer chicken to separate dish and set aside.

  2. In remaining oil sauté onion, garlic and basil until onion is tender.

  3. Add mushrooms and cook until they are tender.

  4. Slowly whisk in wine, chicken broth and tomato paste.

  5. Add chicken to skillet and bring liquid to a boil, simmering for 15 minutes or until chicken is thoroughly cooked. Remove chicken from skillet, setting aside.

  6. Mix flour and butter together and whisk into sauce in skillet. Simmer, stirring frequently.

  7. Stir in parsley and pour the sauce over the chicken and serve.
