I call it "mix match" because you can add in any vegetable to this dish and make it taste great. Substituting other noodle for rice can help with calorie count.

Recipe Ingredients for Skillet Chicken mix-match

1 cup chicken breast, cooked & diced
1 1/2 cups spinach, frozen/chopped
2 tbsp garlic powder
1 tsp celery salt
2 tbsp black pepper
2 tsp cayenne pepper
1/4 cup onion, chopped
2 cups long grain white rice, cooked
16 oz. can black beans
1/2 cup cooked okra
1/2 cup cooked tomatoes
1/4 cup cider vinegar
1 tsp. sugar
2 tbsp olive oil

Recipe Directions for Skillet Chicken mix-match

In large skillet, saute onion in olive oil. Mix in all other ingredients and warm to almost boiling. Serve...and enjoy!
