Skillet Butternut Squash and Greens

Recipe Ingredients for Skillet Butternut Squash and Greens

1 lb diced bacon
2 cups butternut squash, seeded and cubed
2 cups chard, diced
1 zucchini, diced
1 tbsp Extra virgin Olive oil
1 tbsp Balsamic vinegar

Recipe Directions for Skillet Butternut Squash and Greens

  1. Using a potato peeler, peel butternut squash, remove seeds and cut into ˝? cubes.

  2. Place in a large pan and cover with water. Boil 5-7 min or until tender.

  3. Cook bacon in large skillet until browned

  4. Drain squash and add to bacon along with chard and zucchini.

  5. Sauté for another couple of minutes until chard is wilted.

  6. Drizzle with olive oil and balsamic vinegar, serve.
