Recipe Ingredients for Skillet Beef Casserole

16 oz baking potatoes, peeled and cut into 1/8-inch slices
1 lb lean boneless beef sirloin steak
1 sec cooking spray
1/2 cup carrot, thinly sliced
1 cup onion, thinly sliced
1/2 cup celery, thinly sliced
2 cloves garlic, minced
2 tbsp whole wheat flour
1 tsp pepper, coarsely ground
16 oz no-salt-added green beans, drained
14 oz no-salt-added whole tomatoes, drained and chopped
5 1/2 oz low sodium vegetable juice
2 tsp reduced-calorie margarine; melted

Recipe Directions for Skillet Beef Casserole

  1. Cook potato in boiling water to cover 3 minutes or until crisp-tender. Drain.

  2. Trim fat from steak; cut steak into 1-inch pieces. Coat a 10-inch ovenproof skillet with cooking spray; place over medium-high heat until hot. Add steak; cook 8 minutes or until browned on all sides. Remove from skillet, and set aside. Wipe drippings from skillet.

  3. Coat skillet with cooking spray. Add carrot; saute 5 minutes. Add onion, celery, and garlic; saute until tender. Combine flour, pepper, and thyme; stir well. Stir flour mixture into vegetable mixture; cook 1 minute, stirring constantly. Add steak, beans, tomato, and vegetable juice. Bring to a boil; reduce heat, and simmer 5 minutes, stirring occasionally.

  4. Remove skillet from heat; arrange potato over steak mixture to cover. Brush potato with margarine. Broil 5.5 inches from heat (with electric oven door partially opened) 15 minutes or until golden. Yield: 6 servings.
