Recipe Ingredients for SKEWRED SHRIMPS IN MINT PESTO

1/2 cups olive oil
5 cloves garlic
2 cups fresh mint leaves
1 tbsp lemon zest, grated
1 Salt to taste
1 pepper to taste
1 pound fresh shrimp, grilled
1/2 cup lemon juice

Recipe Directions for SKEWRED SHRIMPS IN MINT PESTO

In food processor blend oil, garlic, mint, zest, salt & pepper. Pour half in shallow pan over peeled, deveined shrimp. Keep half for later. Refrig for 1 hour or overnight. Place shrimp on water soaked bamboo skewers. grill for 2-3 minutes on each side until tail is pink and just cooked through. serve hot with drizzle of lemon juice and reserved pesto.
